Gideon Rubin is the founder of Blue Valley Chocolate and Maleku Chocolate, a vertically integrated bean-to-bar chocolate company based in Playa Brasilito, Guanacaste, Costa Rica. Blue Valley operates a cacao farm grown under certified organic practices in the volcanic lowlands of Upala and a chocolate factory and experience center on the Pacific coast. Maleku Chocolate has earned nine international awards across the International Chocolate Awards and Costa Rica's Feria de Chocolate.
